Appearance : The coconut is a spherical fruit with a hard, fibrous outer shell. The shell is generally brown to beige in colour, but this can vary depending on the degree of ripeness and the variety.


Maturity : Coconut ripeness plays an important role in its taste, texture and uses. Here's how to identify the different stages of coconut ripeness and what they are generally suitable for:


- Young coconut: At this stage, the coconut is still green and has not developed its hard shell. It is harvested for its refreshing coconut water and tender flesh. The coconut water in a young coconut is often more abundant and slightly sweet. The flesh is generally thin and gelatinous, perfect for eating directly or using in smoothies and desserts.


- Medium-ripe coconuts: As the coconut ripens, the shell becomes harder and the colour can change from green to brown. At this stage, the coconut water is still present, but its quantity generally decreases. The flesh is thicker and firmer than that of young coconuts. It can be used for direct consumption, to grate and use in dishes, or to extract coconut milk.


- Mature coconut: A mature coconut has a hard, brown shell. At this stage, the coconut water has almost completely transformed into solid flesh. The flesh is thick and firm, perfect for grating and using in cooking and baking recipes. Coconut oil is also extracted from the flesh of mature coconuts.
